If I did my undergrad from Canada, would it be possible for me to do grad school in India? Does India accept Canadian degrees?

I would look up the website for the program you want to attend and ask them directly. I dont see how you will get a sufficient answer here unless you provide more information ie/ what school you want to attend and what degree you are going for.

Do you plan to live in India afterwards?
There is a very large volume that you can find in the reference section of your local library or university library called 'directory of commonwealth universities". I havent seen/looked for this book for nearly a decade so I could be wrong but it has a comprehensive listing of all the major universities in India and what admission criteria is etc.
