UR story is so much like me...and I'm sure of many more.The only difference is that I'm not working BUT I hav 2 little ones (double trouble) .....my husband does a regular 8-5 and then part time nd comes back late not earlier then 12:00.SO I don't expect ny help frm him.And I help him in one project he has taken up.My son is very poor eater.Whole day goes in cooking/making kids eat/cleaning/washing dishes/laundry etc etc.....
This thread is very interesting.I'm we can benefit from each others ideas whatever suits to whoever....
So I request everyone to keep pouring their shortcuts as u r doing.....
My quick recepie:
I take pita bread.Spread mayonise....put lettuce layer....fill up with whatever leftover veggies/tomatoes (yesterday i had sum noodles leftover so i added them aslo) /salt/pepper/chili ...make a roll nd EAT.

Sometimes back , someone had suggested cooking 3-4 dishes at one time and storing them in the freezer (except potato based curries ) and then alternating b/w them to maintain interest ...... also plastic wraps are great to preserve freshness even while storing rotis ....
Cook once a week and reap economies of scale ..... mix yogurt with water , beat it and raita is ready in 5 minutes after mixing salt and add ons ............. boondi is a readily available 'raita' add on ........... Chop an onion add lime and together with the raita you have kinda 2 dishes which add to your menu. Somehow I find that chopped/sliced onions with lime and kept over a day better the taste .

Time saving strategies I've used include making enough food for leftovers for another night, using ready fried onions, as well as ready bought garlic paste, but I'm not too keen on the store bought ginger/green chilli pastes. For dhania, I cut and wash it, then store the extras in the freezer...that's a big time saver for me. Tortillas are good substitute for rotis when you can't be bothered to make them, and when you can be bothered, make enough to last another dinner, I usually have to make about 5-6 for 2 nights worth of dinners. I've never tried the PC rotis, but will give them a go now that I know they exist! We hardly make rice but again, when we do, we make enough for 2 dinners.When boiling daal, boil double the amount and freeze half for another time.
Also, clean up as you go along so you don't have to do it in the morning.
For a quick fix, the store bought pizzas (Delissio brand or whichever one you prefer) are great...you can even add toppings if you want. Even the ready made pasta sauces are not bad once you add some spice to them. Costco does some nice ones and they do some nice ravioli too (veg and non-veg) that cook in about 5-7 mins.
And last of all but not least - always use the dishwasher! Oh, and get hubby to help out if he doesn't already. In my house, I do the majority of the cooking which is fine as I enjoy it, but the cleaning up afterwards is done by him which really helps. On a good day (cooking and cleaning from scratch, we are done by baout 8pm...enough time for a movie before bedtime!)
And since we did the dishes the night before, we don't have to worry about them in the morning...for breakfast, hubby prepares the tea/coffee and sets out cereal for both of us while I'm in the shower...another time saver.
