Your personal copy of the ticket and payment for it or the stub from the boarding pass, any purchases at airports, break in stays at any other country and a stamp at that airport and the stamping of the PP at the time of entry into Canada and other activities here will be sufficient proof of your stay out of India.

You make a proper statement with copies of these aforesaid documents, if you can locate them, and get them all notarized here locally, could be the document that you are looking for. If you were employed with some one, then a letter stating that you were present from such and such date and reported to work from morning opening time till the evening closing time will be added advantage and proof enough for all legal purposes. Also obtain two visiting cards from the Notary Public and attach the same to the documents that get posted.

Also contact the airline with dates, if they are still flying and get a statement that you were in their manifest for that flight together with anyone who traveled with you in that flight will come handy. But obtaining the same will be time consuming. Alternately ask the booking agent for a copy of the old itinerary.
