I am applying for my Candian Passport renewal. Will this change any info on my OCI. Do I have to update anything in my OCI after new canadian passport recd.

Yes, after getting a new passport, better to apply for paste a fresh visa sticker on your new passport, this sticker is called U STICKER.
You will get a new OCI & U Visa number which will indicate your new passport number on OCI card and on visa sticker.
It will cost you $25Cnd (Bank D/Money Order)plus VFS fees.
This service falls under OCI Miscellaneous menu.

**Indian Immigration do allow travel using valid life long visa on expired passport but better to be at safe side and carry just one NEW passport with up to date info.

Carrying the expired passport with the "U" visa is perfectly fine and it is not a matter of "safe/unsafe side". The user has a choice of traveling with the old passport (with U visa) along with the new passport as advised by the Indian government.
what is the process to apply for new U sticker. Do we have to goto Indain Consulate by appointment or can it be done thru' mail.

IMO, it is the similiar process like OCI and will take around 45 to 60 days to get back your passport with new U-sticker.
VFS and CGI will asked for all the photocopies,documents, etc...to renew your U-sticker in new passport.
