My return flight to Vancouver is like Bangalore to Dubai then Dubai to Seattle then Seattle to Vancouver.
I have plans bring pickles, dry fish, spices, pulses and ayurvedic medicines (with prescription). Will there be any problem at Seattle airport customs for bringing these things.

Depends on the day and the inspector. If you declare dry fish as food in the customs form, you also have the option of stating nothing will stay in the US as you are taking an outbound flight. The decision now lay in the hands of the customs.
If you don't declare and get sniffed out, it's an altogether different story.
Third option - nothing might happen. You might just breeze through.

CBSA are very strict currently. You don;t need a dog to sniff that item.
We get tons of dried fish here in Canada. There are many kinds available. So, drop the idea. Secondly it is a prohibited item and you are clearing the item through US Customs first. They will crucify you.
Your Medicines Ayurvedic or Allopathic can be brought in with a prescription, as long it is not Marijuana or Opiates. Generally No Narcotics and Codeine. There are other Ayurvedic medicines that are in the banned list. Avoid bring them if they are in that list.
So, please check with the Doctor who is prescribing them to you. Even then, they will only allow you a quantity specific for a few days and find out from your Doctor who the suppliers are here in Canada. You don't need to pay $800 in fines to the Canadian Customs. (CBSA)
There are No Problems. But just the Bad Experience and the $800 in fine, if you get caught, thats all.

In case if you are bringing ..... DECLARE and see if you can manage.
In a worst case they throw them in a garbage.
