When you enter India, if you use Indian passport, you will be let in, of course. When you leave India, you will be asked to show your status in Canada during checking in AND during emigration check.
By showing your Indian passport, your status in Canada can be proved via a valid visa or a PR card (PR stamp in passport is not valid). However, as a Cdn citizen you will not have either of them in your possession. So how will you leave India ?
If you use your Canadian passport, then the Indian authorities at emigration will want to see an Indian visa on your Cdn passport and an entry stamp on your Cdn passport. You will not have that since you used Indian passport to enter the country in the first place. Now, they will want to know why you entered India illegally.

There is no such thing as dual nationality as far as India is concerned. Once you take up Canadian citizenship, you automatically give up Indian citizenship.
Why do you want to enter India illegally? It is unlikely you will be able to board the plane from Canada without a PR card if you show Indian passport.

When you become a canadian citizen, you automatically stop being an indian citizen; so your indian passport is not valid anymore.
Therefore you can't use your indian passport to enter into india. You must get a canadian passport and apply for an indian visa or OCI status or PIO card.
