From my experiences to Dubai (some times just on transit).
I've never ventured much with respect to buying gold. Three hour transit doesn't give you a lot of time to shop. One or other way, you will end up walking gate to gate for about 30 minutes, another 30 minutes for security screening line up, 30 minutes to be present before the gate. You will find the whole airport so crowded.
Then you would spend 30 minutes freshen up in the airport, probably another 30 minutes for a coffee / tea / snack.
Usually, I will have enough time to buy some chocolates and I've seen others buying Booze and Cigarettes, it is doubtful whether there would be enough time to buy very expensive items. Its a different ball game if you stop over.

I have been through Dubai and Gold is very competetively priced. It is the most competetively priced available in any airport. Designs are also good. people say that during dubai shopping festival, you get much more better offers.
Of course, at Today's prices,Gold is a dead investment.
Buying in Dubai (in coins) is much better as there is a new tax introduced in India.
If you want to buy diamonds set in gold, India is a better option.
Also donot forget the Dubai lottery at the airport.
Peace
