Hi Anya,
Looks like your parents got the visa! As fast as US trip is concerned, its no problem at all. We made 4 trips to US with my parents who had entered Canada on a single entry visitor visa on the second-last day of validity. As long as you make trips to US within the original "allowed to remain" period (usually six months from the date of entry in Canada), you would be OK. If the immigration stamp does not indicate a "validity date", then it is defaulted to six months. In very rare instances the officer may put a stamp with a specific leave to remain period (1 week to 3 months). So if your parents are asked how long they intend to remain in Canada, it may be safer to say "five to six months". I am assuming your parents have US visa...
I don't think I understood it incorrectly. As long as the first entry to Canada is made within the visa validity date, subsequent entries to/from the US can be made within the "allowed to remain" period (usually six months from the first date of entry to Canada). This is very clearly explained on the CIC website and quoted by Anya. I have personally gone through the situation last year.

You mean, you visited the US and then came back to Canada within the "allowed to remain" period (stamped in your passport) AND with the EXPIRED cdn visa?
Yes. Canadian visa (single entry) expiry date = 6 June 2007. Entry into Canda = 23 May 2007. Allowed to remain in Canada until 22 Nov 2007. Visted USA 22-28 August 2007, re-entered Canada - no problem. Visited USA again for day-trips on 12 Sep, 19 Sep, 12 Oct and 15 Nov. Re-entry to Canada never a problem. Left Canada 22 Nov 2007. No hassels, no problems whatsoever. I hope this clarifies the point.
There is further explanation to what Anya has originally quoted from CIC website, which is "buried" in another topic (Extension of stay). The following link explains it in more detail along with how to interpret passport stamps.
Quoted from CIC website below:

"May I leave, then re-enter Canada?
In order to return to Canada, you must be in possession of a valid passport or travel document. You also need to hold a valid study or work permit if you are returning to study or work in Canada.
If you are a citizen of a country that requires a temporary resident visa (TRV) to travel to Canada, you will also need to be in possession of a valid entry visa to return, unless:
you are returning to Canada following a visit only to the United States or St-Pierre and Miquelon; and
you return before the expiry of the period initially authorized for your entry or any extension to it, either as a visitor, student or worker. "
