I have applied to sponsor my parents and am expecting the file to open in the next two months based on current timelines. Today someone told me that it is possible that once the file opens the parents are likely to be denied a visitor visa to Canada. Is this true?

NO. There is such thing called dual intent and it is possible to obtain a Visitor's Visa for them. Make an affidavit saying "that they will definitely leave Canada at the end of the expiry of the Visa Period" and get it attested by a local Lawyer there in India. That might help a little.
Don't put off the Sponsorship Application, as Parents age very fast and you have to take good care of their health before, during and after the submission.

Not sure but I had attended a work shop by Praveen Kalra of Dixie Bloor Neighborhood community center and he had mentioned that there are 2 phases of the Sponsorhsip Process .
a. When the file is in Mississauga and they are checking your ( applicant's ) details .
b. When they have finished the above and acknowledge you to submit the PR Application from the person being sponsored ... ( in this case the parents ) .
He had mentioned that generally in phase 2 , the Visa would more likely be denied as to the intent is contradictory ... and they fear that the people are more likely not to return .
He had also mentioned that its better to apply during phase A .. Browse for Praveen Kalra in the charcha seach box ' USER ' .... He works at a Community Center and is very helpful .

Am in the same boat and have just applied for my Mom's visa, while her PR is in process at NewDelhi CIC.
