Currently there are (So called direct flights) on Air Canada through Zurich. But they fly out of Delhi, direct. Also check Air India. See if they also have a direct flight out of Hyderabad to Toronto? Things are constantly changing. And Emirates might be flying direct to Toronto from Mumbai already, please check, It is a Non-Stop flight.
The ones in the Middle East. who have deals for cheap fuels, are offering a flight in January middle 2015 for 821 Canadian buckaroos. But with fixed return.
If you want an open ticket, you will have to contact the local travel agents there in Hyderabad and get more details from that end.

As far as I am aware Air Canada does not fly to anywhere in India. The ticket will be issued with a partner airline like Air India, Lufthansa, etc., and there will be layover at the connecting airport, be it London, Frankfurt, etc.
Air India stopped flying to Toronto ever since the last pilot strike few years ago.

I do travel once an year. But my travel has one stop enroute, so that I get to stretch my legs and enjoy the break.
Also I do not speak the regional languages that many of the travelers speak. So, my assistance will be only good if they are traveling on my flight at the starting point and has the same routing. Hence my suggestion to you would be is to take a direct flight out of New Delhi or Mumbai and a flight direct to Toronto. (If that is the destination you are expecting, the helper will travel to.)
Since there are forms that need to get filled up prior to landing, I would suggest that you collect the forms from the CBSA in Canada and explain to them why you need them and help your Parents fill them out prior to the start of the flight and ask them to produce them on landing to CBSA.

You can try contacting a travel agency in Hyderabad and find out if they can help you out finding someone who can assist your mother with the travel.
There are two Telugu associations in Toronto, Telugu Toronto and TACA. You can also contact them and ask for assistance for your mother. May be something might work out, you never know!
