First obtain admission for your children into the school. The School will be in a better position to give you the dates of entry and exit.
Their admission needs to be specific, such as Grade III for one of them and stay in that School till Grade VI. That should give them good 4 Years stay in that school. Get the dates from the Admission section of the School.
Based upon the acceptance and the Dates with years etc., you should get them the STUDY Visa. You may also need to get the finances etc., worked out of Canada. (Even though you might not need the funds.) That will give you the required standing for the Indian Government Study VISA.
You will have to obtain their Marks sheet here in Canada before their departure from their Current Educational Institution, from their PRINCIPAL. That should get the formalities started in earnest and you are on your way into India. Since the Children have accompaniment into India you are all set. But as said, please provide your wife with a AUTHORIZATION to travel with the kids as it is needed for travels with one spouse taking the children out of the country.

You can go for OCI, takes about 2 months to process. It would give you the flexibility to go to India and stay for any duration whenever you want and you don't have to wait for visa processing.

2 points come to my mind ,
Without OCI, you should be worried about extension of Visa beyond 180 days in India. That rule applies for visitor visa. I am not sure about the duration of Entry Visa. You might be going with Entry Visa being person of India origin. You must check the max duration.
Kids are generally issued passports for 5 years, you should check the expiry dates of current passports before getting the Visas stamped.

A friend of mine, married to a cool white chick in US, had to return to India; they have two kids and put both of them in KIIT international school in Bhubaneswar. The wife works there too as English program director. They seem to like it there so much, they have been gone for more than 6 years! Originally, they meant to stay there for one year only. My guess (only) is that he may have gotten OCI for wife and kids. I heard the kids on youtube: they are boisterous, noisy and speak English with some distortions (the kid says her granma is worm.... of course she meant WARM lol). The mom keeps teaching them the right way to say words). I was thrilled to see how much they fit in and are oblivious to the fact it is India. So I moved a few crores into Indian banks and am working on retiring and heading back.
So look for any well known International schools so your kids don't lose English and also learn the local language. Obviously, they need parent(s) close by; money alone does not build character so do not brag about supporting them cashwise, and they will develop emotionally on their own. They need hugs, encouragement AND discipline.

Passport renewal isn't an issue at all. It can be renewed from India too.
