Hi Bhavli,
1] after 3 yeras , (ie. studying in canada for 2 years ) will i be considerd as stayed in canada for 1 year legally or not
You will be considerd that you have stayed legally.
2] what do you mean by \"applying thru buffalo \"
Most of the people apply thru US to get faster immigration as they are fast ( as they don't get as many applications as in India ) as compared to India...but you have to prove them that you have one yr legal status (since the date you apply ) In Canada
3] what are the kind of jobs should i get to satisfy the immig. officer after the completion of my masters so that he /she will allow me to stay back in the country
For Example you complete Masters in Chemical Engg. you have to find a job like these titles shown here

4] what if i dont get such a job ,which will be satisfactory according to the visa officer then what are the other options that i have if iam desperate to stay back in canada
You can go back to school and apply for study permit. But it's not hard to get after studying here.
5] is canada freindly towards students who want to settle and work in canada after the completion of their couress
Canada is only looking for Skilled workers so if you are able to find work after studies they ( in future ) will give you more 15 points as shown here but it will take time as I don't know when they are going to pass this

it show that
\"— The group of persons eligible for arranged employment points has been amended to include recent graduates who have studied and worked in Canada. These applicants have good economic settlement potential as skilled worker immigrants. Without the amendments to the provision, skilled workers who are recent graduates have greater difficulty in obtaining arranged employment points, as a permanent job offer needs to be confirmed by the Department of Human Resources Development Canada (HRDC) in order to be eligible; \"
