I was told that Golden temple atta has lot of maida in it which will make you gain weight. Ironically the advisor was overweight inspite of NOT using Golden Temple atta.....Go Figure!

Golden Template has 3 different colour bags - the purple, the red and the yellow.
The red and the yellow is basically "enriched" flour, while the purple one is whole wheat flour.
Enriched flour is basically denatured and has the synthetic vitamins added to it.
If you want your chapatis and parathas to be smooth and easy to make (like India), go for the red bag.
However, remember that it is not the healthiest choice.
If you want a healthier flour, go for the purple bag.
But with this, the rotis will be "rubbery" and sticky, which is because it is a whole wheat flour.

Do you get Pilsbury Atta or Shakti Bhog. Both are indian brands and quite nice and available in Kuwait/Dubai. Is it available in Canada?

In any case, it is "All purpose flour", which is another term for processed, "enriched" flour.

I haven't seen either in the Toronto market. We do get Pilsbury rotis though.

We use the Golden Temple purple bag, but our rotis are never rubbery or sticky. Heres what i got from my wife :
Put some oil
Then put <B>HOT boiling water</B> and use a spoon to knead it.
Keep kneading it until its touchable, and then continue...
