What all can be BBQed ,always my chicken gets burned from outside and not that good from inside ,any tricks .
What else u can make ,all recipes are welcomed,Veg -Non Veg .
Try cooking your chicken in 'indirect' heat and only putting on the bbq sauce or whichever sauce you are using right at the end just before you serve so it doesn't get burned as the sugar in the sauce burns very easily.
Another trick for bone-in chicken is to boil the chicken first for about 20 mins so it is cooked through and then finishing off on the bbq to get that flame grilled flavour...this keeps in alot of the moisture for juicy chicken. I had chicken this way at a neighbours house recently and it was very good. Keep the water the chicken was boiled in for future use in soups or gravys.
You can bbq practically anything...for veggies such as brocolli and cauliflower which can burn around the edges, try putting them in a foil pocket and place in 'indirect heat on the bbq - the veggies will cook in their own steam and be very tender. Asparagus, carrot slices, potatoes, peppers and aubergine you can place directly on the bbq....make sure you spray them with a little olive oil and season with salt and pepper.
As for meat...the possibilites are endless! I have even made pizza and calzones on the bbq.
