Hi,
Anybody know the GUJARATI sweet made from Milk called BASUDI. Please share recipi.
thanks.
The method that I know is as under,
Ingredients:
Milk......1 ltr per 2 persons
Sugar....as per taste
Saffaron......relative to qty of milk (adds flavour and colour)
Elaichi powder......1 tea spoon (adds flvour)
Jaifal powder......1/2 tea spoon (helps digest)
Very simple proceedure, but time consuming. Start heating milk and sugar on high flame/stove for a while, once milk is boiled, lower the flame/stove and keep stirring the same for like a million hours, till the colour of milk turns dark cream and it becomes kind of thick. You may want to verify if sugar qty is OK.
Once that is done, just add both Elaichi and Jaifal powder to the milk. Take little bit of saffaron in small pan, add just a little bit of milk, heat it for like 30 seconds and stirr it and crush it and mix it in the basundi.
Let it cool down. You can take a big shallow utencil, put the basundi pan in the centre and fill up the shallow utencil with COLD water to let it cool down faster. Once it has ccooled down, put it into fridge and serve CHILLED
P.S. before serving, you can also sprinkle thinly cut pcs of almonds and pistasios.
