Sir,
When we leave canada nobody stamp the passport how do they know that when we left the country.I got pr about 2 weeks before and now back to europe and wonder how much time I can stay out of canada to keep my pr valid.

Your passport must have been stamped when you entered Germany. It is not difficult for immigration officials to track when you left Canada.

To maintain PR you have to be in Canada for 2 years out of 5 years starting from the day you landed in Canada as PR.
