Hi CDs,
I face a problem in my food every day. Roti or Chapati or Puri any thing I make gets dry very faster and become very hard. Some times it's not chewable. I have tried experimenting with amount of oil and water but the problem persists.
Can you guys help me to resolve problem. I am not new to making roties. I am using Nirav's wheat fluor. We want to use only wheat fluor as white fluor is not good for health eating everyday.

Try kneading the flour with warm water...it always work for me :-)

Have you tried "meera" brand atta? your rotis or paranthas turn out to be soft and fluffy.
i am also looking into possible suggestions if anyone has tried using wheat flour for roti and unpolished rice (non basmati rice) from big grocery stores like no frills, food basics, price chopper, lob laws or some big Chinese grocery store. If at all any brand of rice or roti flour has worked for fellow desi from above stores.

I use suraj atta it is v. good. I put flex seed and tofu in the dough. Tofu mkes the rotis v. soft.
We have tried all different ones and only two stand out that are actually good: Pilsbury and Parle-G. Unfortunately I am told there is a shortage of the latter. The former is still available in many places.

I use Taj atta and for dusting while rolling out rotis , I use the Five rose atta which is very fine flour unlike TAJ so keeps Rotis softer. Also applying little butter/ghee on cooked rotis keeps them soft.
I tried kneeding with warm water ..it does work keeping rotis soft but if I kneed it for 2-3 days then it gets sour(khatta).
