I got to understand your question. But not the tastes. So, break down the food you have tasted here in Canada and what are the locations and how good it was at that location. May have to go there once more.

I will start you off with the first item, which is VADA PAV. I have tasted the same here in two locations and they were pretty close to what I got in Mumbai. But for a specific taste, you may have to return back and attack that location.
1) At a location, End of Morning Star and Goreway Dr. inside the mall there is a stand. It came pretty close to Mumbai style.
2) Seasonal , but they will be there on weekends at the Gerrard Street and they also claim to have one at a location, South of HONEST ED's , about 3 miles south, at 707 Dundas at Bathhurst. (A very bad intersection to go to) But safe to go on a street car (Tram) Cost about $5 - to $8 per serving.
Also here is some review. And with that review in mind, go there and taste it. Our summer is just starting out and so take a shot at it.

Grilled sandwich .: I have tried my own hand at it and with different ingredients in it. So, I am sure you are the best cook to make your own with the ingredients that go in it.
Mine is with two slices of cheese, KRAFT velveeta, with White, Videlia Onions, very finely chopped sparcely spaced between the two slices of cheese and the bread lightly butterered and grilled and about ten small drops of MATOUK'S Hot Sauce also spread on the cheese. (A bottle costs abouot $2.50) and done crisp to perfection. Mmmm makes me hungry a little too soon..
Punjabi Cuisine: You are on your own. There are a few good places in GTA.
Hakka Chinese.: Do tell us about your choice of dishes and see where are all the good locations here in the GTA.

The hottest chillies we get here are not in bulk. But in some corners they are standard and they dry them and powder it to add to the ingredients that make the mix, which gives that particular hotness. So, you know that the mix or the Curry that we eat only as good as the location where it comes from. The Sinhalese have their hot peppers, GUNTUR from the Andhra and a few out of Karnataka border make a great mix and if you know what are all of the items that go into the PAV-BHAJI mix and want to make your own, go get the chilli powders from the above stores, and ask specifically for the Hottest powders and get to make your own mix, that is for starters. If you want fresh hot Chilies, ask the grocer for Scotch Bonnet peppers from Jamaica, a small piece of its skin, the size One Sqare inch will blow your caboose for the whole day, But drop it before cooking into the mix.
After that you can enjoy your winters indoors. Also have a pitcher of water with ice cubes...
