you very correctly narrated the job situation in canada. getting odd jobs is also not so easy.

After all these correct replies, I cannot but comment on a few aspects of your question. That is the same mistake many ( i repeat many ) do, having this mindset before coming. Meaning thinking that they are ready to do hardwork and hardworkers succeed, so they can succeed too.
1. You thought initially you can start by doing odd jobs ans still earn about 3000 and live of about 1500
Earning 3000 gross is dependent on both you and your wife getting regular odd job ( which is a rarity ) Odd job by definition is general unskilled labour who they call for temporary replacements or very difficult jobs from which we all will run away in a day or two.
For a moment even assume if you get 3000 gross per month , your take home pay will be about 2200 . Going by the nature of today's jobs ( remote areas, odd times ) you might need a car so add about 500 per month. WHich would take your expense to about 2000 permonth on a basic life style.
Do not go by the words of immigration consultants.

The fancy positions like Financial Planner / Investment Advisor / Financial Consultant etc are nothing but selling financial products to desis. There is mostly no salary , with commission offered on the sales generated. There are so many of these people sellling RRSP/RESP/Insurance/ mortgage that you find them all over . In malls/subways/gatherings/temples/bus stops etc. Not easy either.

You will have to slog it out to earn those $3000. You might have to lift boxes or other things of 20-30 kgs., shovel snow in -20 or -30 degrees, work as security guard, etc. A relatively better job would be in some retail store as sales associate, cashier, financial services, call centre job.
All these jobs ofcourse are not easy to get.
Also note that you will have to spend money on many things like deposit for house (even on rent), bed, chairs, TV, winter clothes, etc. Some of these things you might get from garage sales or some other stores which sell 2nd hand stuff. But otherwise, beds, winter jackets, etc. are pretty expensive. Also if you don't get job, you would still have to spend around $1500 per month to sustain yourselves in the initial phase. Other expenses as mentioned above for buying things could be around $1500 to $2000 one-time.
Not all apartments are furnished. In many of them, electricity, laundry,
etc. are extra. You might not save any money for atleast couple of years.
If you are willing to sacrifice your pleasures like going to a hotel or watching movies, etc. for atleast couple of years then only think of coming to Canada. I know of people where the husband works night shift & wife works day or vice-versa & they hardly meet.
Physical labour is what you might have to if you are not lucky to get a relatively easier job.
I have a relatively easier job as a Sales Associate in a retail shop but my wife has started working & she works 6 to 2 in & I work 3 to 9. On her off days, I work more hours to meet the monthly expenses.
My wife did not work for almost 1 year. It is not necessary that you will get a job in your field after doing odd jobs for 6 months or even a year. Many people get adjusted to the odd jobs after some time. Some do not.
