Is it true that, as per canadian law, if am going on vacation out of canada alone with my children and if my husband is not travelling with me, I will need a letter from my husband granting permission to take my children with me? I can't believe this? I have travelled twice in a year to India from Sharjah, never once did they (immigration) ask me any such thing. I am told, if you don't carry husband permission letter in writing, they think, am kidnapping my own children. ridiculous isn't it?

Yes, initially you will find all this very surprising and stupid - but if you observe the society here, you will understand the need. Moreover, please be prepared to answer questions (in your everyday life) as :
1. Is this your husband's child? (they mean the current husband).
2. Are you married? (even though you have kids).
3. Do you live with your husband? (or common law friend/partner?)
4. To your kid - is your Dad you father (by birth) or by way of mother's marraige?
5. Is your last name same as your husbands? Is your son's last name same as yours and your husbands?....
...and many many more...
Dont resist - you will be get tired soon - start to accept.
With multiple marraiges and out of wedlock kids - these questions and system are justified for the safety of the kids..
It is adviceable for you to carry the letter if the kids are less than 10 years. For older kids, they can answer the immigration officers themselves.

Is this another price to pay for migrating to canada? I don't know, how many more surprises are in store for us?
My passport and canada PR, literally everything is my maiden name, since after marriage did not bother to change my name since takes long time to complete procedure in India. After my passport expired, I wanted to change but then, my canada Visa was stamped in my passport in maiden name, so new passport was also in maiden name. My and my husband passport states we are each other's spouse and my children passport has mother and father's name.(since I made affadavit first time, when I was travelling with my first son) that I am mother and my daughter was born in sharjah so, they also put both parents name on passport. Now the question is :
will I have to take father's permission inspite of both parents name in children passport?
should I change my name before citizenship or after citizenship or should I continue with my maiden name?
Do I have to stay continously for three years to get citizenship faster? in this 3 years of continous stay, Can we take vacation for say 1-2 months to visit our old mother and relatives without affecting our citizenship status?

I was asked once at the airport long back when my wife and kids were on their way to India. Funny thing though they forgot to take the letter I wrote (I have a bad handwriting though, may be the reason). If asked, write a letter in 2-3 sentences and get it over.

for your info, my friend who came from US, forgot to carry papers while returning and they harrassed her for 2-3 hours, contacted her relatives in US and father in US. It was really frustrating for her with infant in hand.
when we checked with US friends, such permission letter is not applicable in US nor UAE nor I think in India.
