10-15% is the income deserved by waiters. Not giving someone's deserved income is immoral (not illegal). Grocery cashier does not expect tip because job does not warrant that. When the nature of job allows one to get tip and you do not offer some you are actually eating on his money. You are doing that because it easy to get away with it. Very simple thing is that as you expect taxes on bill, expect to pay tip as well and then you will be at peace.

You pay the taxes on bill because it is legal, pay the tip because it is moral/ethical/right thing to do.

I guess the best thing to do would be take a job of a waiter for couple of days. Just tell the customers not to give you tip or return the tip when they offer you. Again it is the culture over here. In India it was not there so some of us are not comfortable. I was hesitant first time when a woman cut my hair ..and moreover I had to tip her. But then that is the culture over here.
Talk to any waiter and ask them if they will take the job when there is no tip involved...don't be surprised if they find idea as crazy.

Fortunately someone already put this together to justify I do not have to re-invent the wheel:

http://www.tip20.com/why-should-you-tip/27

part of it:

The most common argument (and frankly the most annoying and ignorant) against tipping is that by not tipping you are “helping” the servers cause for better hourly rates. For starters, hurting one server here and there on any given day is not going to further any cause. Second there is no cause. Most servers do not rely on their hourly income. Serving is hard, fast paced work. Servers can earn a good living from the tips they get. If servers were going to work for a strictly hourly rate, I can assure you that rate would be high. If the hourly rate were high, guess what would happen to the prices you pay when you go out to eat or drink? That money would have to come from somewhere.

Do you legally have to tip? No. Occasionally, you will have a situation where gratuity has been automatically added to your bill. This is usually on larger groups or parties. This gratuity has been added because it is easy for the server to get a tip that is far less than they deserve, because in a group setting it is easy for one or two people to under pay causing the rest of the group to fall short. Again, you do not legally have to pay this gratuity, but if you don’t you should have a talk with the server and/or manager and explain why. Remember, just because a gratuity has been added, it may still be less than a good tip for the server. For example, a gratuity may have been added at 15%. This is a tip for average service. If your server did a great job it is good to add in the difference to make up to 20% or more. Many times the server had to give up several other smaller tables to take your party, so even with automatic gratuity they end up making less on their shift.

After all that, why do servers do it? Well in the end, there are enough people out there that understand that a good tip is a kind reward for a job well done. And waiting tables can be quite profitable. It is no surprise that the most financially successful servers are typically the most friendly, efficient and entertaining. These servers are rewarded for exhibiting those behaviors. And we all want to encourage those behaviors. Don’t we?

No I do not .. at least when it is at my expense ... I do not even bat an eyelid when punching a zero on the tip .... its a matter of principle .

Increase the prices , increase the tax , I don't mind ... but don't expect favors for a job which you are expected to do in the first place .

A job is a job is a job .. No difference . It has to be and should be paid by the employer . Period ... Another alternative is that the servers can be given comission by the employer on the basis of customers / business they serve .... Why take it out of the customer's pocket as a disguised extra cost ??

I am not stealing anybody's income by not tipping .. They are getting that below minimum wage pay because they accepted it / were made to accept by the employer .... They had another choice and if they did not .. then I guess they were not fit for anything better ...

You get paid for what you are worth .. Like it or not !!

If tipping is norm, then would you tip a server who just did his/her job and nothing extraordinary or special were done? In Indian restaurants I do not find servers who would do a great job in terms of satisfying customers. Do we still have to tip them to avoid so called "guilt of not tipping"?

What about buffet restaurants? There are no individual servers you can oblige. There are cleaners not servers who would only clean your tables. Whom do you tip? I have seen their bills always would have gratuity added already. Does it make any sense to tip just to blindly follow the herd?

Do you tip the sales rep and customer service guys and gals in retail shops? They too provide service, take pains in explaining stuff that you do not know... Not all work on commission.....When you buy a TV worth $2000, the guys aid in your decision making process, help you load your purchase in your vehicle...That too is personalised service

I am not saying you should tip them.. I am all against tipping of any sort... just drawing comparisons in different scenarios and situations.

min should be 15% tip.
Not sure what is the nature of your job fido, but when you are getting served or in other words a personalized service is provided, tip becomes integral part of bill. That is the nrom.

The difference here is, the expectations are not set. If it would have been a norm then yes you will pay tips to sales rep, cust service guys. Even if you offer them tip you will get confusing reaction. About loading, yes , I did offer the tips..some who were in need accepted, some did not. The sales rep who do not work on commission must be getting paid much better than the ones who work on commission or servers.
Bottom line is First generation desis would always have this issue to make peace with tipping. Second generation will not have that issue.

Whoever takes the waiter's job here in Canada, takes it in anticipation of tipping. You are not forced to tip, but again if you are not paying tip then you are doing something wrong. No one is asking you to pay tip to cashiers, sales reps, fast food restaurant workers because that is not a norm and not expected.

Whenever you do not tip a young guy/girl just think of your son/daughter who took this job to complete his/her education in anticipation of better tips. No other decent part time job offers this flexibility and decent income based on tips.
Dont be chindhichor in pretext of principles. In Canada, NA tip is an integral part of server's income and by not tipping you are sort of doing an extortion.
Tips are not expected by cashiers, sales reps, etc. so no need to pay them. Waiters, hair cutters take the job in the anticipation of tips and most of the customers pay those handsomely. So, some of them not paying may not hurt them.
Comparing bribe to tips is the most idiotic argument I came across.
It is upto individuals pay or not to pay..but sad that many of desis who responded to this post do not agree and chances are all desis are being looked as non tipping customers.
I now understand why Gurulxmi forces gratuity. Though they are loosing 5-10% extra that I would have paid normally. . But I guess they would prefer to force 10% gratuity than loosing it all altogether.
I am sure in such cases whoever do not agree to pay tips have no choice but to pay that. They will not stop going to Gurulaxmi on the principle of not tipping

I rest my case.....Bhool chuk muaf karo.
