I was checking plane tickets and found that if I fly from NJ to Mumbai and back then I am saving approx 500$ per ticket which will result in total saving of close to 2000$.
My question is if I drive down to NJ , park my car at relative place , fly to Mumbai and again from Mumbai to NJ and then drive back to Toronto. Will there be any problem related visa or immigration either at Mumbai , NJ or London air port (Stop over place) ?

No problem at all unless the trip is for over 6 months one time.
Just for your info, did you try Buffallo / Detroit?
Driving to NJ is a pain and the pain itself may be around $ 750 each way (driving time, gas, food, wear and tear of car etc...)
