yes, get as many utensils u can get along with you. they are very expensive here. Get pressure cooker and its gasket. Also get one weight extra. I lost one and had to buy new pressure from here. They are very expensive. Get spice for 1st year consumption so that you donot have to spend on ur arrival.

How about mattresses?? I heard that they cost as much as CAD 500/- to 1000/-?? Is it feasible to get one from India or elsewhere??

First thing to do is to relax. I also lived in Mumbai for some time before moving here. Life is just like in Amchi Mumbai.
Let your wife do not worry about anything. PLEASE MARK MY WORDS TODAY, she will be the happiest in the next one year. Everybody from a 12th pass to a PhD have to do the same job. Hence do not worry about any courses in India. Come here and she will need to enroll in some temporary employment agency and she will start with in 2 days making $ 8 to 9 per hour. Let her not worry about her communication skills or lack of higher education. Just watch and observe your wife over a period of time, of she will grow in confidence and in the next year would pester you to buy a town house. Relax you are coming here in the season where there will be lots of employment opportunities and hence enjoy your air flight, and come in a relaxed sense.
In regards to utensils/spices/groceries, you will find everything is available here, but once you convert 1$ to Rs.35 you will find it initially expensive. Hence bring your used utensils, pressure cooker and basic utensils. This way you will not need to spend anything in the first six months.
Contact your friends for temporary accomodation, and try to get into a apartment and try to avoid a basement. Eventhough basements are cheaper they are not good for your children health. Always read the fine print of the lease agreement you are going to sign and note that Ontario law requires you to give a 60 days notice to your land lord for a month to month lease agreement. Always get a receipt for your rent as you need it for income tax filing. On your first your income tax which you will file in 2006 declare your world income at the minimum. Do not worry about your children, they will love the schooling system here and just watch their accent go from Hinglish to Canadian in 3 months of schooling. Note that you will have no medical coverage for the first 3 months, and hence you can bring some medication if required. You can start working the same day you land here. You just need to apply for SIN card and show your proof of application.
I can assure you will feel that you are still in Mumbai's Borivali or Kandivali here and you will not miss anything. All the groceries(Your Export Quality stuff), all movies songs are available here. Just enjoy your trip here, do not worry about anything and just land here. You would find a way to survive and succeed here. I can once again gaurantee you that your wife and children will be the happiest here, while you would complain.
Have a Blast and Welcome to Canada!

Speech by Thomas Friedman of The New York Times....
"When we were young kids growing up in America, we were told to eat our
vegetables at dinner and not leave them. Mothers said, 'think of the
starving children in India and finish the dinner.' And now I tell my
children: 'Finish your maths homework. Think of the children in India
who would make you starve, if you don't.'"
