i did the Dubai - toronto - dubai round trip less than a year back on Olympic Airways via Athens... they had the best rates at that time - approx 3000 AED for the return flight incl taxes... dunno whether their offers is still on, but you could still check this out..
Etthihad has started operating Toronto - Abu Dhabi and are giving one free ticket for one ticket bought... but their proces may still be higher..

Sounds reasonable, I paid 1000$ CAD (one way) last year from YYZ to Dubai

This may not be directly related... but I just purchased a roundtrip on Emirates from YHZ(Halifax) to Mumbai traveling in Nov. for $1760(including taxes). I was told in Dec. it would be about 100 dollars more. so from YYZ to dubai should be much less I would think.
