Please suggest some easy to make meal for kids after school. We are vegitarian and I want to try something new for kids.
It appears that you're looking for evening snack.
Kids like variety and at the same time they seem to dislike repeated ethnic food. Considering this and considering the health of the kids, you could plan to feed them the following snacks.
- Cheese sticks (if concerned about Fat, see you could try the cottage cheese).
- Steamed Veggie Pot stickers.
- Baked whole wheat pita chips (Watch the sodium).
- Whole wheat crackers with cheese
- Crunchy vegetables (Baby Carrot, Celery) with Dip.
- Healthy nuts (Not fried), make sure you supplement with enough water through out the day as my personal observation is that they tend to cause constipation, which might affect young girls badly.
- Tofu (braised), I know I know what your kid will say but you could try.
- Samosa's sometimes.
- Veggie rolls.
- Spaghetti with Marinara sauce.
- Fruits with chips / any other slightly spicy snack.
- Toast with peanut butter / jelly.
- Garlic buttered bread / Garlic toast.
- I will add more when I am able to think of it.
Unless the kids or over weight, adding little bit of fatty food (Cheese etc.) wouldn't be bad considering the nutrition packed. What you need to watch is not to add processed food and stick to whole so that preservatives and the deadly sodium are eliminated.
If your kids consume meat stuff, it is different ball game to suggest snacks. Esp.., eggs that helps growth of brain but at the same time meat stuff (even seafood) brings its own issues including Sat. Fat, mercury which are often counter productive.
Well, upbringing the kids with healthy food habits / lifestyle is an important thing and I believe we have umpteen opportunities here to support it.

Here what we do in our home
-Home made corn flake chiwada (take corn flakes-plain, add peanuts, add rice flakes, potato sticks, in a pan little oil and salt, pepper and haldi and few spoons of sugar...give it a tadka kind...I make a full jar which runs for a month and is very healthy for kids...you can also make bhel out of it).
-Poha, upma
-Mini Pizza's (on normal wheat or white bread, spread Pizza sauce, have veggies, cheese and bake in toaster for 5-10 min, very healthy and delicious)
-Have you tried puff pastries, the readymade pastry sheets can be bought and fill in any filling you like, aloo, mushroom-cheese, or just plain pastry sheet (it becomes like khara biscuit), my kids have them very often and love them.
-Vegetable Nuggets (from market)
-Bake the samosas instead of frying them.

My kids love this recipe that's why I wanna share with friends.
It's very colorful and healthy.
Grilled veg. sandwich-
cut onion, garlic,
broccli, carrot,
green/yellow zukini,
red/yellow/green capsicum,
tofu,
tomato,
some lemon and soya sauce and thai sauce.
Just put lil olive oil in a nonstick pan, first fry onion and garlic and then add all the veggies.
Add rosemerry, basil and oregno and salt.
Roast vegi covered for 5 min and then open it stir fry it until it is soft.
You can put these veggie on bread and roast it in grilled sandwich or eat with rice.
It's very healthy and easy to make.
Great. You could at least write a word or two about comments made by others who answered your questions. It doesn't hurt. And you could've posted your recipe in your original post. Its not the "Instant Gratification" but more of a public forum etiquette.

I'm so sorry JRF as I am pritty new to write online and using forums. So please accuse me for my deed. Anyway thanks for your info it was really helpful cause I'm making a list to hang it on fridge door so I'll remember for everyday snacks.
