Hey there,
Although the Rasoi and Restaurants is a great place to post recipes if one wants, I still kinda agree with Nikhil that we should have a seperate place to solely post CD members tried and tested recipes.
MODS: I thought that perhaps you could provide a link in which one can browse recipes once we get a few listed....you could have them sorted by veg/non-veg, appetizers, main dish, rice dishes, deserts, etc. to make it easier to search for a particular recipe.
What say you?
Anyway, I'll be the first to post a recipe that my Mum just gave me and I tried just the other day. I was shopping and although I don't buy this item regulary, it looked so fresh and plump that I decided to buy it give it a go.....
Here's the recipe:
PP’s Mum's Grilled Aubergine (Eggplant)
I large Aubergine
1 onion, chopped finely
3-4 large garlic pods crushed
1/2 tbsp crushed ginger
2 or 3 green chillies, chopped finely
2 or 3 tomatoes, chopped finely
Fresh coriander, chopped finely.
2 tbsp oil
Knob of butter
½ tsp red chilli powder
½ tsp turmeric
½ tsp ground roasted cumin seeds
Salt to taste
Wash the aubergine and coat thinly with a little oil. Prick the top end a few times with a fork or knife (this will prevent the aubergine from bursting when grilled and allow excess water from draining out). Place under a hot grill and grill until the skin changes colour and starts to pucker. You will probably have to stick a long skewer in the end to help with the rotation so you don’t burn your hands. Rotate the aubergine using the skewer (if you don’t have a skewer, use a long fork or knife) until all sides are grilled. Take off the grill and let it cool down. Once cooled, peel off the skin. Chop the aubergine into small pieces; it will probably get mushy which is fine. Set aside.
Put oil and butter in non-stick pan and heat until butter has melted (do not let butter turn brown). Add onions and cook until transparent. Add ginger, garlic and green chillies and cook for about 10 mins, keep mixing to prevent it from sticking to the bottom of the pan. If it does, add a little water. When the mixture is slightly browned, add salt and powdered spices and mix well. Add tomatoes and cook until you see the oil start to split. Add aubergine and cook until the oil splits again. Add fresh chopped coriander and serve with roti and salad.
Enjoy!

Here is the recipe for the bhaji used in masala dosa.
2 Large potatoes
2 medium onions
2 green chillies
4 tablespoon canola oil
1 teaspoon urad dal+ channa dal
½ teaspoon black mustard seeds
1 small ripe tomato
½ teaspoon turmeric powder
1 teaspoon sugar
Salt to taste
Boil the potatoes and check it for softness during boiling (an easy way to do it is to stab it with a knife). Peel off the skin and mash it into chunks. Soak the urad + channa dal in water for 10 minutes and drain off the water. Chop onion into medium size pieces, green chillies and tomatoes chop fine.
Heat oil in a pan on medium heat and add the urad+ channa dal and fry them till they turn a little brown. Add the mustard seeds and allow them to splutter and after this add the chopped onions and fry them till they become soft. Add turmeric and stir for 2 minutes and after this add the tomatoes, sugar and salt. Put in the mashed potatoes and cook with stirring for around 4 minutes.
Enjoy with dosa’s, puris or naan.
If you like coconut you can add a teaspoon of dry grated coconut.

Thanks PP. Will have to your mom's recipe out.
How about this? We can have sub-sections within the Rasoi section. The first one would be recipes. Within that we can have other classifications and put the recipes there.
That will make them a lot easier to locate.
Let me know if this sounds good and I can do this. Also, if you guys can recommend what some of those sub-sections can be (goal being making recipes easier to locate), I'll structure it likewise.

I think this covers more or less all main classifications. Any others groups I've missed can be added. Are we sticking to just desi food?

I'll create these sections by end of this week.
