You can keep the car without insurance in your garage/driveway. This way it will not have any plate on it and you wont be compensated if it is stolen or vandalized.
If you drive a car without insurance (first time, exprired insurance whatever reason) and if you get caught or get into an accident you are in deep shit. Its a lot of lawyer expenses/fines or maybe even prison.
As far as accident goes, if you get into a accident and dont have insurance then the for those cases the govt pays for it.
The govt has set up a fund to pay for exactly these kinds of accidents.
Unfortunately the govt has mandated insurance companies regularly pay into that fund, which the insurance companies get from you (higher insurance premium)
