The word Paaji (its from punjabi I guess)- whom should it refer to? Is paaji means brother? How r the seniors called?

Yes, Paaji means brother, bhai, bada bhai etc. Generally speaking, you can call 'Paaji' to anyone you would call 'bhaiya' or 'bhai' in hindi otherwise. Another synonym to 'Paaji' is 'Veerji'.
