If you have a Number of a Insurance policy for her stay, then get it from the insurance agent. Also attach a copy of the same to the sponsorship letter.
(Please do not pay in advance.)

It has to be Canadian medical insurance and so it needs to be bought from Canada. Minimum of $100,000 for 1 year is required.

you have to satisfy an immigration officer that you have ties, such as a job, stability. Also satisfy an immigration officer that your parents will leave Canada at the end of their visit;To receive visa takes about 4-8 weeks ( A Return Ticket)
Passport has to be valid for a minimum of one year
Cover health care, hospitalization and repatriation
Provide a minimum coverage of $100,000 from the date of arrival
Be valid for each entry to Canada and available for review by a port of entry officer.

Some Insurance agents will let you pay Monthly also.
