Hello!
1-For mother already in Canada on visit visa single entry and extended so wants to apply for multip entry/supervisa but from here is it possible without going backhome
2-passport expiring in few months,if passport got renewed from consulate then can extension of visa applied or not?

If the Passport is expiring in a few months, so will the Visa, into Canada.
First get the Indian Passport renewed for the next TEN Years.
Then, get a tentative Insurance coverage policy for an year.
Then pay the fee for the Five year visa and request an extension.
They might ask for a medical here. There will be an additional cost to you which is the cost of her return ticket, as it will go a waste. So, it is your decision.
You will find it difficult to complete all of these formalities in a few months.
The Visa Officer has the final authority to determine the extension of VISA.

I got my parent's multy entry visitor visa extended to super, while they are in Canada.

Yes. It is termed as 'extension of stay', such an extension is not multi entry (means it expires on leaving the country) . The 2 years for extension as super visa are counted from date of entry into Canada on prior visa. 100k insurance is required. Medical is not required if no pre condition.
