have always wondered why onions dont get brown while frying. have tried with the white and red onions... its just not the same as in india. any tips or suggestions.Thanks in advance.

It is a biggest challange for the Immigrants to fry white and red onions into brown to have a good taste of food. You and I could not do. I am wondering any has fried to brown till date. Lets here from other desi members about onion frying technology.

Try this
Sprinkle some salt while frying onions .The water content is so much that it is really a challenge to get them brown. Salt theory gets me closer to desired results.
Also i tried those ready made fried onions...I am actually happy to use them coz it saves me time and most imp the smell
Can you please specify what you do .. When I fry onions they always turn brown !!
This is for Yellow onions. I have not tried to fry white onions.
Red onions go pink and translucent before brown..

I also prefer Yellow onions for cooking coz they have highest amnt of sulfur and give a rich brown color and become sweeter and milder when cooked. Put oil in pan and saute onions then sprinkle pinch of salt which speeds up frying process( remember the smell issue ) . But avoid frying on high flame coz it makes them bitter.
I leave Red onions for raw consumption.
Am I understanding this correctly : there are 3 kinds of onion : white yellow and red ? I knew abt white and red but not abt yellow...so yellow is the best and one can get in indian grocery ?
U can get yellow ones at any grocery store even at Nofrills etc or any chinese vegetable store wud have them.
I have hardly used White onions..whats ur experience with them?
