Hope TK or some seniors could advise on the formalities of working in India on a Canadian citizenship. Do you have to get a work visa or is the OCI good enough or do you even need an OCI

Actually the companies (which pay cash in white) do not even see your status before giving employment. However PAN card is essential for your payment to start (as the company has to deduct taxes and pay it to the Govt). So PAN is essential.
The govt. of India regulation states that with OCI, you can work in Canada without further registration / need for any other visa.
If you take work in companies that pay you in black, then even the PAN card is not needed.
I would advise you to have a govt. recogonized address proof (like Aadhar, Driver's license, Ration card-if you can get one). This will be necessary for a host of things, including opening a bank account.
