One more tip for the CDs. Soak almonds overnight and eat in the morning. 6-8 is enough. That will have very good protein content and fiber. Also good for people who have a history of diabetes in the family. May help reduce weight to some extent.

For a diabetic, any food which is soaked and then more digestible will have a higher GI (glycemic index) than raw (which takes longer to digest).

Nuts, unlike fruits, are best eaten without the skin.

Raw nuts, esp. almonds, contain many nutrient inhibitants.
Soaking destroys them and makes the nutrients available for absoption in the body.
GI can be a very deceptive concept and you cannot use the GI exclusively to make decisions on how to eat and what to eat - diabetic or otherwise.
There are several food items that have higher GI then refined, white sugar.
On another note, sprouted nuts are much more healthier than non sprouted (because all the nutrient inhibitors have been destroyed).
Almonds are harder to sprout than other nuts, but can be done under a controlled environment.
