Being in GTA had & have the opportunity to enjoy various ethnic desi joints - Guajarati, Punjabi, Bengali, Goan, etc. The common aspect I came across is majority of the desi places lose steam over a period of time - mostly due to flavor. They do not/cannot maintain the taste buds which are one of the main reasons for running a successful restaurant; service, attitude & pricing being the next.
IMHO, instead of fretting over, better to visit the place which happens to offer the best of taste, value & service at a given time; frankly speaking - there cannot be any comparison between desi restaurants in India & here.
If you happen to be/visit GTA, check out Tangerine for Indian style Chinese food – north of Steeles on Markham in Markham. The place is run by desis of Chinese origin & have reasonably priced delicious fare with good service - as of now.
BTW, would appreciate inputs for getting authentic fresh Tandoori Roti in GTA.

I agree the food and customer service in GTA Indian restaurants are not at par. However, there are many reasons for that
(1)As pointed by morning_rain and Garvo Gujarati the ingredients and vegetables are not fresh, I think this can be the reason for that.
(2)In canada if you taste onion after cooking it creates a taste of sweetness, which is not good really. Other reason is milk the taste of cow milk is very bad. Other thing obviously spicies are not as fresh as in India so it doesn't make perfect in taste. and
(3)The biggest reason is that the restaurants are not getting as much customer base as in India. So they have to definitely think about economies so they cant afford much or expensive ingredients and high quality customer service.
Apart from restaurants, the taste of fruits particularly apples is not like India. Kashmiri apples are far better in taste than the apples of Canada.
I have been to kitchen of a restaurant of a friend (in San Jose). After that my appetite for Indian food was gone. This could be true for any restuant in India too - may be they are dirtier. Howerver the main difference was the preservation of food. Here in NA, they keep food for longer period of time using preservatives. Even the dough can be kept for weeks! And this what kills the taste.

Hi, I'll be the only stranger taking side for Indian food sold in NA! If you live in Latin America (in my part where there are no Indian Res) the food sold in NA is heavon...atleast its there! Last trip to Toronto my whole family, day and night ate Indian...even the waiters suspected...what kind of hunger is it!!! Something is better than nothing!

On a related note..I believe the flavour of Indian food itself is so unique - even the rotis made by everyone's mom (in India or anywhere in the world) are different though they are prepared by those very same ingredients, under same temperature and weather..My mom's food taste's different than my neighbours Mom, even though every other ingredient is same...My point is, its dfficult to achieve a universally acceptable taste.
South Indian food in South India tastes different than any other palce in India. Infact, born and brought up in Mumbai on Udipi taste, I generally do not enjoy the "authentic" south indian food available in south india...
The same applied to North Indian food, Gujarati, Rajasthani..etc..etc..
Regarding service, if we are looking for $4.99~$12.99 unlimited buffets, how can we expect the restaurant to employ $14.00/hr or more expensive waiting/serving staff?
My favourites for north indian fare - Bombay bhel at hwy10/eglington.

I live in the Southern states of USA and prefer Mexican food over desi food. For desi food nobody can beat the ladies of my house for there cooking.
Mexican restaurants have a lively atmosphere, excellent customer service and food is similar to our food.
