PIO service has been withdrawn and is no longer available. OCI is the only option available now.
This is what I read on the BLS site,
Effective from 9th January 2015 the PIO service is withdrawn by Indian high commission in Canada and eligible people may apply for the OCI
...which means you're left with only one choice - OCI.
Now since one of the parents was a Indian citizen at some point, your child is eligible for OCI.
Here's the link from BLS which has a list of the documentation required. OCI is life long.

So what happens to current PIO status? Previously, I had heard that it would have lifetime validity, instead of having an expiry date to be followed by renewal.

For 3 year old , every 5 yrs you will have to renew your OCI photo & get OCI reissued ( miscellaneous services ) till the age of 20 ! ..as their face changes a lot !
SO another hassle for you , every 5 yrs if you have a kid ! OCI miscellaneous services are just as tedious 2-3 months as getting a NEW OCI all over again !
