Generally I substitute the packaged vermacelli, cello packs that is, which costs, by the by under a buck for a kilo, but they are dried packs. The boxed packs are a bit on the costlier side, and it will not burn a hole. See if it suits your taste. The finest variety that I find or discovered is called CAPELLINI, but you need a wire gauge to measure the sizes.
I also came across an excellent sampling in the Greek section where in you see a finer selection but in a round birds nest shape. Excellent to cook and enjoy. Lesser in quantity or a little pricey. The same is also available there in the Italian section in some gourmet shops.
Hey... if you are really looking for the fresh stuff it is also there and you may have to ask the bakery section to make a batch and I have bought the same on occasions. But specifically ask for capellini.
Since I am not on Atkinsons Diet and love the rice sticks, as they call it, I find that I can get that in plenty in any chinese store or the chain stores too for buck a pound.
